Ingredients
- 2 tablespoons olive oil
- 1 onion finely diced
- 4 cloves garlic minced
- 1 tablespoon all-purpose flour
- 2 carrot peeled and sliced, large
- 2 celery chopped, stalks
- 1 red bell pepper diced - optional
- 3 cups turkey meat diced, leftover
- 8 cups turkey broth or chicken broth
- 1 teaspoon poultry seasoning
- 1 teaspoon Italian dried herbs
- 1 teaspoon parsley dried
- 2 bay leaf
- salt to taste
- black pepper to taste
- 2 cups fusilli noodles dry
- 1 tablespoon parsley chopped, fresh
Instructions
- Place a large pot or Dutch oven over medium-high heat and add the oil.
- Once shimmering, add the onion and cook until tender, about 3-4 minutes. Add garlic and cook for one more minute, stirring.
- Add the flour, stir and cook for 1 minute.
- Stir in carrots, celery, bell pepper, turkey, broth, poultry seasoning, dried Italian herbs, dried parsley, bay leaves, salt and pepper. Bring to a boil and simmer for 10 minutes. Taste and adjust for salt and pepper.
- Add the pasta and cook 8-10 minutes or until tender.
- Remove soup from heat, discard the bay leaves and garnish with fresh parsley.
