Turkey Soup Recipe with Soba Noodles

Ingredients

  • 1 teaspoon canola oil
  • 1 teaspoon sesame oil
  • 12 ounces cremini mushroom sliced
  • ½ yellow onion chopped
  • 3 green onions chopped, white/light green & dark green parts divided
  • 2 tablespoons ginger minced
  • 4 garlic minced, cloves
  • 6 cups chicken or turkey broth, reduced sodium
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoons rice vinegar
  • 1 soba noodles 4 ounce bundle
  • 8 ounces turkey breast cooked, chopped, 3 cups; or chicken breast
  • 4 cups Napa cabbage chopped

Instructions

  1. Heat the canola and sesame oils in a large saucepan set over medium heat. Add the mushrooms, onion, white/light green parts of the green onion and the ginger. Cook, stirring occasionally, until tender. Add the garlic and cook an additional minute.
  2. Stir in the chicken broth, soy sauce, hoisin sauce and rice vinegar. Bring the mixture to a boil, then add the soba noodles. Return the mixture to a boil, turn the heat down slightly and cook until the noodles are tender, 4 to 5 minutes.
  3. Remove the soup from the heat, stir in the turkey and heat until the meat is warm. Stir in the cabbage until the cabbage is wilted.
  4. Stir in the remaining green onions. Serve.
