Turkey Stuffing Balls

Ingredients

  • 2 cups turkey leftovers or fresh, cooked, finely shredded
  • 2 ½ cups stuffing leftovers or fresh, prepared
  • 2 ½ cups potato leftovers or fresh, mashed
  • salt to taste
  • black pepper to taste
  • plain breadcrumbs as needed

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. Heat the 2 ½ cups prepared stuffing, and 2 ½ cups mashed potatoes, leftovers in the microwave for about a minute so they are easier to work with.
  3. In a large bowl mix 2 cups cooked finely shredded turkey,stuffing, mashed potatoes, and Salt and pepper to taste.
  4. Once the ingredients are thoroughly incorporated, shape them into about 1-inch balls. If the mixture isn’t holding together, add in plain breadcrumbs, two tablespoons at a time until they hold their shape.
  5. Place the formed balls onto the prepared baking sheet and bake for 15-20 minutes, turning halfway through baking.
  6. Remove the meatballs from the oven and serve fresh with gravy or cranberry sauce.

Notes

  • My potatoes had a lot of moisture in them, so I used about 1/3 cup of breadcrumbs.
