A variety of toppings like diced tomatoes, avocado, jalapeño, cheese, and tortilla chips customize each bowl. This dish offers a balanced combination of protein, grains, and fresh vegetables that can be tailored to preferences.

Description

The Turkey Taco Bowls feature ground turkey seasoned with a blend of spices including chili powder, cumin, oregano, paprika, garlic powder, and cayenne pepper. Turkey is cooked with diced onion and tomato paste, simmered until flavorful and thickened. The base includes cooked rice alongside black beans, corn, and chopped romaine lettuce, delivering a mixture of textures from tender to crisp.

Once the seasoned turkey is ready, it is layered over the base components, followed by a dollop of sour cream and an array of topping options such as diced tomatoes, guacamole, various onions, fresh cilantro, jalapeños, shredded cheddar, lime wedges, and taco sauce. This allows each bowl to be customized for taste and spice levels.

Additionally, leftovers can be portioned into meal prep bowls using the base ingredients, making this recipe practical for multiple meals. The combination of fresh vegetables with seasoned meat and grains creates a balanced and flavorful meal.

DIY TACO SEASONING

  • 1 TBSP chili powder
  • 1 ½ tsp cumin ground
  • 1 tsp oregano dried
  • ¾ tsp paprika sweet
  • ½-¾ tsp garlic powder
  • ¼ tsp cayenne pepper (or extra to make it spicy)
  • salt to taste

FOR THE TACO BOWL BASE:

  • 1 pound ground turkey 93% lean
  • 1 yellow onion small, diced
  • taco seasoning (see recipe above)
  • 1 TBSP tomato paste
  • ¼-½ cup water
  • 2 cups rice cooked
  • 2 cups romaine lettuce chopped or shredded
  • 1 can black beans (drained and rinsed)
  • 1-2 cups corn (canned or cooked from fresh or frozen)
  • ¼-½ cup sour cream

TASTY TOPPINGS: choose your favorites

  • diced tomatoes or fresh salsa
  • guacamole or sliced avocado
  • red onion raw, sautéed, or pickled, thinly sliced
  • tortilla chips or corn chips
  • cilantro and/or chopped scallions, fresh
  • jalapeno pepper sliced
  • cheddar cheese grated
  • lime wedges
  • taco sauce or Mexican hot sauce

Instructions

  1. To make the DIY taco seasoning, combine ingredients in a small bowl and mix. You can use your favorite taco seasoning mix in its place if preferred.
  2. In a large skillet over medium-high heat, heat oil until shimmering. Add diced onion and cook until tender for approx. 5 minutes.
  3. Stir in taco seasoning and tomato paste and cook while stirring constantly for about 30 seconds, until fragrant. Add ground turkey and cook, stirring occasionally, until almost cooked through but still slightly pink, about 2-3 minutes. Stir in water and simmer on low until saucy, thickened, and cooked through. Season with any additional salt to taste.
  4. Divide cooked rice, lettuce, black beans and corn between 4 bowls. Top with turkey taco meat and a dollop of sour cream, then add all of your favorite toppings and mix-ins from the list above.
  5. For my bowls, I added a little bit of EVERYTHING! So good!

MEAL PREP BOWLS:

  1. Add a base of fluffy cooked rice to each container along with black beans, corn, and taco meat. If you’d like to warm up your salsa and tomatoes along with the bowl ingredients, feel free to add them here or keep separate for a cold mix-in.
  2. If you’d like, add a drizzle of your favorite taco sauce or Mexican hot sauce on top along with a sprinkle of grated cheddar cheese. To garnish, add lime wedge on top with some cilantro and/or scallions and, if you’d like, sliced red onion and/or jalapeño slices.
  3. I like to keep the cold and crunchy ingredients separate so in small lidded sauce containers I’ll add my sour cream and/or guacamole. To a baggie add your crispy corn chips or tortilla chips. Based on preference, you can skip the lettuce or place some in baggies for adding at the end.
  4. Store in the refrigerator until ready to heat and eat for up to 4 days.
