Turkey Taco Soup starts by browning ground turkey in a sprayed pot, then cooking onions and bell peppers with it briefly. The soup base includes canned Rotel tomatoes with green chilies, corn, kidney beans, tomato sauce, and refried beans, seasoned with taco seasoning and diluted with chicken broth. The mixture simmers to blend robust savory and slightly spicy flavors.

The texture combines tender turkey chunks with soft beans and vegetables in a brothy consistency that is warming and filling. It's suitable as a simple one-pot meal that can be portioned for meals ahead.

  • olive oil spray form
  • 1.3 lbs ground turkey 99% lean
  • 1 medium onion (chopped)
  • 1 bell pepper (chopped)
  • 10 oz rotel tomatoes with green chilies canned
  • 15 oz corn drained, canned or frozen
  • 15 oz Kidney Beans drained, no salt added
  • 8 oz tomato sauce
  • 16 oz can refried beans fat-free
  • 2 tablespoons + 1 1/2 teaspoons taco seasoning (or 1 packet store bought low-sodium taco seasoning )
  • 2 1/2 cups chicken broth less-sodium

Instructions

  1. Spray a large pot with cooking spray then brown the turkey over medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add the onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth. Bring to a boil, cover and simmer about 10-15 minutes.
  2. Serve with your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions,  onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.
