Description
The spice blend begins by lightly toasting whole cumin seeds and black peppercorns to release their essential oils and deepen flavor without burning. These toasted spices are ground finely along with dried cilantro, oregano, and Turkish bay leaves. The powder is then mixed with kosher salt, sweet paprika, sumac, cayenne pepper, and sesame seeds to produce a versatile seasoning mix.
This blend combines earthy and citrusy notes from sumac, the warmth of cumin and black pepper, herbs for brightness, and heat from cayenne. Sesame seeds add a nutty texture and flavor. It can be used to season meats, vegetables, or sprinkled over finished dishes to add a layer of Turkish regional aroma and spice.
Ingredients
- 4 tbsp cumin seeds (or 3 ¾ tsp ground cumin)
- 4 tbsp black peppercorns (or 3 ¾ tsp ground black pepper)
- 1 tbsp cilantro dried
- 4 tsp oregano
- 10 bay leaves Turkish variety
- 1/4 cup kosher salt
- 4 tsp paprika sweet
- 4 tsp sumac
- 3 tsp cayenne pepper
- 2 tbsp sesame seeds
Instructions
- In a small sauté pan toast the cumin and peppercorns until the seeds start to pop, several minutes. Do not burn. Remove from pan and place in spice grinder with dried cilantro, oregano, Turkish bay leaves and grind until powder.
- In a small bowl mix the ground spices with the salt, paprika, sumac, cayenne pepper and sesame seeds. Store in an airtight container.
