Turnip Casserole

This Turnip Casserole combines tender diced turnips and sweet apple pieces bound with eggs, flour, and spices, topped with a buttery breadcrumb crust. Baking creates a risen, lightly golden dish with a balance of savory and subtle sweetness. It's a cozy side dish that highlights the earthiness of turnips with the fruitiness of apples for variety in flavor and texture.

Description

Turnip Casserole is a baked dish featuring boiled cubed turnips mixed with diced apple, eggs, flour, and seasonings to create a light batter. The mixture is poured into a baking dish and topped with a salted breadcrumb and butter topping that crisps up in the oven. The baking process develops a golden crust and raises the casserole slightly, while keeping the turnips tender and the apples soft but distinct. The blend of nutmeg, pepper, and brown sugar enhances the mild turnip flavor with warmth and subtle sweetness.

The casserole serves well as a side dish accompanying roasted meats or hearty mains. Its blend of soft, tender textures and a crunchy topping offers a contrast that suits autumn or winter meals when root vegetables are in season.

Ensuring the turnips and apples are cut into similar-sized pieces promotes even cooking. If the topping browns too fast, lightly covering with foil can prevent over-browning. This casserole can also be made in a slow cooker by assembling the ingredients and cooking on low for about four hours. For the topping, panko or cracker crumbs can substitute plain breadcrumbs.

Ingredients

Servings
  • 3 turnips (600g)
  • 1 apple peeled, cored and diced
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 2 egg lightly beaten, large
  • 2 tablespoons butter melted
  • 1 tablespoon brown sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • ¼ teaspoon ground nutmeg

For the topping

  • 1 cup bread crumb 125g, plain, dried
  • 2 tablespoons butter melted
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 375°F / 190°C. Grease an 8-inch square baking dish with oil or butter.
  2. Peel the turnips and cut into small cubes.
  3. Place the turnips into a pot of water, bring to the boil then reduce the heat and simmer for 10 minutes or until tender. Drain well.
  4. Add the cooked turnips to a mixing bowl with the diced apple, and toss with the flour and baking powder.
  5. Stir in the lightly beaten eggs, melted butter, sugar, salt, pepper and nutmeg. Toss to combine, then pour into the prepared baking dish.
  6. In a small bowl, whisk the topping ingredients together, then sprinkle over the turnip mixture.
  7. Bake, uncovered, for 25-30 minutes or until risen and cooked.
  8. Serve and enjoy!

Notes

  • Cut turnips and apples to similar sizes for uniform cooking.
  • Choose sweet apples like Honeycrisp or Gala to complement the turnips.
  • Use panko or cracker crumbs if plain breadcrumbs are unavailable.
  • Cover casserole with foil if topping browns too quickly during baking.
  • Slow cooker option: cook assembled casserole on low for about four hours until turnips are tender.
