Ingredients

Servings
  • 2 pounds turnips
  • 1 cup Parmesan Cheese grated
  • 5 ounces gruyere cheese shredded
  • 4 ounces mascarpone cheese (or cream cheese)
  • ½ cup heavy cream
  • 1 tablespoon butter
  • 2 teaspoons lemon thyme fresh
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground

Instructions

  1. Preheat oven to 375°F.
  2. In a saucepan over medium low heat, add in the butter and once melted, sauté the garlic for about 15 seconds, making sure not to brown it.
  3. Add in the rest of the ingredients, except for the turnips. Allow the cheeses to melt, whisking often.
  4. Once melted, remove from the heat and allow to cool slightly while you prepare the turnips.
  5. Peel the turnips, then slice them very thin. I used a mandolin slicer to ensure all the slices were the same thickness and will cook evenly.
  6. Take a pie dish or other round baking dish, brush it with olive oil, then arrange the turnip slices in concentric circles. This is not required, but it does make the presentation a little extra special.
  7. Pour the cheese sauce over the tops of all the turnips, making sure they are all covered.
  8. Bake uncovered for 45 minutes, then allow to cool slightly before cutting into and serving.

Notes

  • If you can't find Gruyere cheese, you can use Swiss instead.
  • If you can't find mascarpone cheese, you can use cream cheese, just be sure to adjust your macros since mascarpone has less carbs.
  • While you certainly don't have to arrange the turnips in concentric circles, it does make a nicer presentation.  Alternatively you can just layer them in your casserole dish.
