Tuscan Lemon Chicken

Tuscan Lemon Chicken consists of boneless, skinless chicken thighs marinated in olive oil, garlic, shallot, fresh herbs, lemon juice, and zest. The marinade imparts brightness and herbaceous notes, while grilling adds a slightly charred exterior. Seasoned simply with salt and pepper, the chicken cooks through to juicy tenderness, capturing the fresh flavors of the herbs and citrus.

Description

This recipe starts by combining olive oil, diced shallots, minced garlic, fresh parsley, rosemary, thyme, lemon juice, and lemon zest with salt and pepper to create a marinade. Boneless, skinless chicken thighs are coated in the marinade and allowed to rest for at least two hours or overnight, allowing the flavors to meld.

The chicken is then drained from the marinade, brushed with extra olive oil, and grilled over medium-high heat. Frequent turning ensures even cooking until the chicken reaches an internal temperature of 165°F and is juicy and thoroughly cooked.

Tuscan Lemon Chicken brings fresh herb and citrus flavors to tender grilled chicken, suitable for a family meal. The simple seasoning highlights the natural juiciness of the thighs and the brightness from the lemon and herbs.
