This recipe starts by combining olive oil, diced shallots, minced garlic, fresh parsley, rosemary, thyme, lemon juice, and lemon zest with salt and pepper to create a marinade. Boneless, skinless chicken thighs are coated in the marinade and allowed to rest for at least two hours or overnight, allowing the flavors to meld.
The chicken is then drained from the marinade, brushed with extra olive oil, and grilled over medium-high heat. Frequent turning ensures even cooking until the chicken reaches an internal temperature of 165°F and is juicy and thoroughly cooked.

Ingredients
- 3 tablespoons extra virgin olive oil divided
- 1 shallot diced
- 3 cloves garlic minced
- 2 tablespoons parsley chopped fresh leaves
- 1 tablespoon rosemary chopped, fresh
- 1 tablespoon thyme chopped fresh leaves
- 2 tablespoons lemon juice freshly squeezed
- 1 tablespoon lemon zest
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 pounds chicken thighs boneless, skinless
Instructions
- In a medium bowl, combine 2 tablespoons olive oil, shallot, garlic, parsley, rosemary, thyme, lemon juice, lemon zest, 1 teaspoon salt and 1 teaspoon pepper.
- In a gallon size Ziploc bag or large bowl, combine chicken and olive oil mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade.
- Preheat grill to medium high heat.
- Brush chicken with remaining 1 tablespoon olive oil; season with salt and pepper, to taste.
- Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 10 minutes.
- Serve immediately.
