Description

This casserole starts by baking whole red potatoes pierced with a fork to release moisture. Once cooled, the potatoes are halved and their flesh scooped out to mix with softened butter, cream cheese, sour cream, half and half, garlic salt, shredded cheddar and mozzarella cheeses, and most of the cooked bacon. The seasoned mixture is poured into a baking dish and topped with remaining cheeses, bacon, and chopped green onions or chives.

Baking at 350°F allows the casserole to heat through and develop a melty, slightly golden cheese topping. The flavors meld to create a rich dish with creamy potato and cheese textures complemented by smoky bacon and fresh onion notes.

  • 8 medium potato red
  • 1/4 cup butter softened, unsalted
  • 6-8 ounces cream cheese softened
  • 1 cup sour cream
  • 1/2 cup half and half or cream
  • 1 tsp garlic salt with parsley flakes
  • 2 cups cheddar cheese divided, shredded
  • 2 cups mozzarella cheese divided, shredded
  • 10 lices Bacon cooked and chopped, divided
  • salt to taste
  • black pepper to taste
  • green onions chopped, or chives

Instructions

  1. Preheat oven to 400 degrees.
  2. Scrub potatoes, then use a fork to poke 8-12 deep holes all over the surface of each potato to let the moisture escape during cooking.
  3. While potatoes are cooling mix sour cream, salt, pepper, bacon, and cheeses in a bowl. Set aside.
  4. Place on a baking sheet and bake for 45-55 minutes. Preheat oven to 350 degrees.
  5. Let cool slightly, then cut in half, lengthwise and scoop out potato flesh into a large bowl.
  6. Add softened butter, softened cream cheese, half and half, garlic salt, 1 1/2 cups shredded cheddar cheese, 1 1/2 cups shredded mozzarella cheese and all but 1/4 cup of chopped bacon. Salt and pepper to taste.
  7. Pour the mixture into a lightly greased 9x13 baking dish. Top with remaining shredded cheeses, bacon, and green onions or chives.
  8. Bake at 350 for 30-35 minutes and serve warm.
