Twice Baked Potato Casserole Recipe
Description
This casserole starts by baking whole red potatoes pierced with a fork to release moisture. Once cooled, the potatoes are halved and their flesh scooped out to mix with softened butter, cream cheese, sour cream, half and half, garlic salt, shredded cheddar and mozzarella cheeses, and most of the cooked bacon. The seasoned mixture is poured into a baking dish and topped with remaining cheeses, bacon, and chopped green onions or chives.
Baking at 350°F allows the casserole to heat through and develop a melty, slightly golden cheese topping. The flavors meld to create a rich dish with creamy potato and cheese textures complemented by smoky bacon and fresh onion notes.
This casserole is ideal for serving warm as a side dish with roasted meats or grilled vegetables. Its combination of soft potatoes and cheeses makes it suitable for cozy meals and can feed a crowd with its comforting qualities.
