Twice Baked Potatoes

These Twice Baked Potatoes feature golden-baked potato skins filled with a creamy mash blended from butter, sour cream, cream cheese, and cheddar cheese, mixed through with crisp bacon bits. The mash is spooned back into the potato shells, topped with extra cheese and bacon, then baked until melted and warm. A sprinkle of fresh chives adds a mild onion flavor and a touch of color, creating a comforting side or snack with a combination of creamy, cheesy, and smoky textures.

Description

Twice Baked Potatoes combine baked potato skins with a rich, creamy filling made by scooping out the soft center of warm potatoes and mixing it with butter, sour cream, cream cheese, cheddar cheese, and crumbled bacon. This filling is seasoned with salt and pepper to taste and can be loosened slightly with a splash of milk if needed. After refilling the potato shells with this mixture, they're topped with additional cheese and bacon, then baked until the toppings melt and the potatoes are heated through. Fresh chives provide a mild, fresh garnish.

The texture is creamy interiors with tender potato skins, complemented by the melted cheese and the crisp bacon bits. The baking step melds the flavors while warming the potatoes evenly.

This recipe suits a hearty side dish or can be served as a snack or appetizer. The rich filling and smoky bacon work well with grilled or roasted meats or as part of a casual meal.

  • 1/4 cup butter
  • 1/4 cup sour cream
  • 2 oz cream cheese

  • 10 lices Bacon cooked and crumbled
  • salt to taste
  • black pepper to taste

  2. Mash potato with butter, sour cream, cream cheese, 1 cup of grated cheese, and 3/4 of the crumbled bacon. If it seems too dry, add in a splash of milk. Add in salt and pepper, to taste.
  3. Spoon or pipe mashed potato into shells, top with remaining cheese and bacon. Bake at 350 degrees for 15 minutes or until warmed through and melty.
  4. Top with chives and serve warm.
