Twice Smoked Easter Ham

Twice Smoked Easter Ham features a large smoked spiral ham that undergoes a second smoking process enhanced with a spicy fruit glaze made from Cajun seasoning, brown sugar, fruit preserves, and mustard. This double smoking adds depth to the ham’s flavor and a glossy, spicy-sweet crust, elevating the finished product for holiday meals or special occasions.

Description

The ham is placed in a preheated smoker at 275-325°F and cooked uncovered, allowing the exterior to deepen in color while basting with its own juices every 20 to 30 minutes. The glaze is prepared separately by gently heating Cajun seasoning, brown sugar, fruit preserves such as Peach Habanero or Apricot Jalapeno, and Dijon or whole grain mustard until combined. Once the ham reaches an internal temperature of 130°F and the outside is golden brown, it is basted with the fruit glaze twice over several minutes to form a sticky, flavorful coating.

This process results in a ham with smoky, sweet, and spicy notes layered together. The glaze adds a fruity kick against the smoky background, which contrasts with the traditional savory profile. The spiral cut makes the ham easy to serve by the slice.

The ham is ideally served warm for Easter or other festive meals. It benefits from slow smoking to enhance moisture and flavor. No additional notes are provided.

Ingredients

Servings
  • 9 Pound ham smoked spiral

Spicy Fruit Glaze

  • 2 Tablespoons Cajun seasoning
  • ¼ Cup brown sugar
  • 6 Tablespoons fruit preserves such as Peach Habanero or Apricot Jalapeno, spicy
  • 2 Tablespoons Dijon mustard or whole grain mustard

Instructions

  1. Preheat your smoker to 275-325 degrees.
  2. Place the spiral ham with all of its juices in a foil pan or roasting pan, and place on the smoker.
  3. While the ham is smoking, prepare the Cajun inspired fruit glaze. Place all of the ham glaze ingredients in a small pan and gently heat over medium-low heat. Stir frequently until the glaze is well combined and all of the brown sugar has melted. Remove from the heat and set aside.
  4. Smoke the pre-smoked ham, uncovered, until it reaches an internal temperature of 130 degrees. Baste with the ham drippings/juices about every 20-30 minutes. If one side of the ham is getting darker than the other, rotate the ham. When the outside of the ham has reached a golden brown color you can cover it with foil to prevent further browning.
  5. Once the ham has reached 130 degrees, baste the ham with the spicy fruit glaze. Cook for about 10 minutes then glaze the ham again.
  6. Remove the double smoked ham from the smoker and serve warm.
