Tzatziki Avocado Salmon Rolls Recipe
Description
This recipe assembles smoked salmon slices into a rectangle on plastic wrap before spreading a mixture of thick tzatziki, minced chives, and lime juice evenly across. Ripe avocado slices and thin cucumber strips are layered on top, then the salmon is rolled tightly using the plastic wrap to form a cylinder. Chopped sesame seeds are sprinkled on the outside, and the roll chills briefly to firm up for easier slicing.
The finished rolls feature layers of creamy, tangy tzatziki, buttery avocado, fresh cucumber crunch, and smoky salmon, creating a balanced range of textures and flavors. Serving them on cucumber rounds adds crispness and a refreshing base, with extra chives for a mild onion note.
These rolls can be prepared a few hours in advance and sliced just before serving. They also work well with crunchy rice crackers as an alternative base, making them versatile for parties or light snacks.
Ingredients
- 1 English cucumber
- 2 tablespoons tzatziki see notes
- 2 tablespoons chive divided - plus extra whole chives to garnish, minced
- lime juice from 1/4 lime
- ½ avocado peeled and sliced, ripe
- 5 oz salmon lox, cold smoked, 150 grams
- 2 tablespoons sesame seeds I like a mix of white and black
Instructions
- Cut 12 rounds of the cucumber - for the salmon rolls to sit on when serving. With the remaining cucumber, cut it into 8 thin strips and remove the seeds.
- In a small bowl, mix together the tzatziki, 1 teaspoon of the minced chives, and the lime juice. See note 1.
- Lay a piece of plastic wrap (about 16 inches long) on your table. Place the smoked salmon on top of the plastic, overlapping the pieces to make a 12" x 7" rectangle. Pat them down gently so they stick together.
- Spread the tzatziki over the salmon. Lay the avocado slices down the center of the salmon, top with the cucumber strips, and sprinkle the remaining chives over the top.
- Using the plastic to help you, roll the salmon tightly then sprinkle the sesame seeds over the top.
- Put the salmon rolls into your refrigerator for 15-30 minutes to make slicing it easier.
- Slice the salmon roll into 12 pieces, place them on cucumber slices, and top with 2 small chives on each.
Notes
- Use extra-thick tzatziki or thicken thinner versions with a bit of cream cheese for best texture.
- Prepare rolls up to 4 hours ahead; slice and serve shortly before eating.
- Try serving rolls on crunchy rice crackers as an alternative to cucumber slices.
