Description

This traditional Greek tzatziki starts with full-fat strained Greek yogurt whisked until smooth. Coarsely hand-grated English cucumber is squeezed to remove most water, ensuring the dip remains thick and creamy rather than watery. Garlic is grated or pressed to infuse the yogurt with pungent aroma balanced by olive oil's richness and a touch of red wine vinegar for acidity. Salt and black pepper season the mixture evenly.

The dip is refrigerated for at least three hours or preferably overnight, allowing the garlic flavor to mellow and the ingredients to harmonize.   • 850 grams /1 lb + 14 oz Greek yogurt full-fat; strained
  • 320 grams / 11.3 oz (2,5 cups) cucumber coarsely hand-grated; English variety
  • 2 teaspoons (about 15 grams) garlic grated or pressed, cloves
  • 3 tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • teaspoon salt
  • black pepper ground

Instructions

  1. Add the Greek yogurt to a large mixing bowl and work it with a hand whisk to become really smooth and creamy. Making sure there aren't any lumps in it.
  2. Squeeze the grated cucumber with your hands to remove most of its water. Then add to the mixing bowl along with the Greek yogurt.
  3. Add the remaining ingredients to the mixing bowl as well and mix very well.
  4. Refrigerate for at least 3 hours before serving for the garlic to cool down a bit. Or even better overnight. If you like raw garlic you can serve this dip right away, along with some pita bread or rustic artisan bread!
