Ukrainian Easter Eggs (with Grandma's Secrets)

Ukrainian Easter Eggs are decorated by boiling white eggs in a dye made from onion skins to create rich amber hues. Herbs wrapped against the eggs inside nylon create natural stenciled patterns. After boiling, the eggs are brushed with oil for a shiny finish. This traditional method produces beautifully patterned, colorful eggs for Easter celebrations.

Description

This Ukrainian Easter Eggs recipe involves extracting color from onion skins simmered in salted water. Fresh herb leaves such as cilantro or parsley are wrapped around white eggs, which are then tightly enclosed in nylon to press the herbs against the eggshell. The eggs are submerged in the onion skin water and boiled, allowing the natural dye and the plant patterns to transfer onto the eggshell.

Once cooled and unwrapped, the eggs display orange-brown hues with delicate herb silhouette patterns. Brushing them with olive oil creates a glossy surface that enhances color depth and preserves the design. These eggs are typically used for Easter festivities and have a cultural significance as decorative treats.

The process combines natural ingredients to achieve unique, handcrafted eggs without synthetic dyes, making it a traditional and festive activity.

Ingredients

Servings
  • 12 egg white
  • 3 cups onion skins
  • 5 quarts water
  • 1 tbsp salt
  • 1 tbsp herb leaves cilantro or parsley
  • 1/4 cup olive oil

Instructions

  1. Place the onion skins in a large pot with the salt and water. Bring them to a boil, then reduce the heat to medium-low and allow the skins to simmer for 10 minutes to extract the color.
  2. To create a stencil with the herbs, wrap the herbs around an egg. Place the egg inside the nylons and tie a knot. If you are decorating multiple eggs, make sure to tie a knot in between each to secure the herbs against the egg.
  3. Bring the water to a boil and add the nylon-wrapped eggs to the water, making sure the eggs are fully submerged.
  4. Remove the eggs from the boiling water and allow them to cool down. Remove the nylon and herbs.
  5. To make the eggs shiny, brush them with oil. Hide them and enjoy!
