Ultimate Breakfast Sandwich
Description
The sandwich starts with an omelette made by whisking eggs with skimmed milk, sharp mature cheddar cheese, and finely chopped spinach, then cooking gently in olive oil until set. Meanwhile, sourdough bread slices are toasted for a crisp base. The bacon rashers are grilled until cooked through and crisped on both sides. Mashed avocado and sliced tomato add creamy and fresh layers.
To assemble, mashed avocado and tomato slices go on two slices of toasted bread, topped with the folded omelette, then bacon. The remaining two slices of bread are spread with a small amount of ketchup before sandwiching together. This combination balances creamy, savory, fresh, and smoky flavors with a variety of textures from soft avocado and eggs to crisp bacon and toasted bread.
Variations include substituting the bread type, leaving out cheese in the eggs and adding a cheese slice separately, or adjusting the inclusion of tomato and avocado depending on preference. The sandwich can be frozen without avocado and tomato, which is best added fresh. A vegetarian option is also possible by replacing bacon with vegetarian sausages.
Ingredients
- 4 lices sourdough bread
- 2 egg
- 1 tablespoon skimmed milk
- 10 g cheddar cheese grated, mature
- 30 g spinach finely chopped
- 4 rashers Bacon grilled
- 1 tomato sliced
- 0.5 avocado mashed
- 1 teaspoon olive oil
- 1 tablespoon ketchup
Instructions
- Mash 0.5 Avocado and set aside.
- Whisk 2 Eggs with 1 tablespoon Skimmed milk and then stir in 10 g Mature cheddar and 30 g Spinach.
- Heat 1 teaspoon Olive oil in a frying pan and add the egg mixture. Gently cook for about 3-4 minutes until the egg is cooked. Fold in half and then slice into two.
- Put 4 rashers Bacon under the grill and cook for 2-3 minutes each side.
- Assemble the sandwiches by toasting 4 slices Sourdough bread. Spread the mashed avocado over 2 of the slices of bread and add 1 Tomato. Top with the cooked egg.
- Add the bacon then divide 1 tablespoon Ketchup between the other two slices of bread.
Notes
- You can use bread from a loaf or substitute with English muffins, bagels, or croissants.
- Cheese can be mixed into the omelette or added as a slice during assembly.
- For freezing, omit mashed avocado and tomato; add fresh before eating.
- Make a vegetarian version by swapping bacon for cooked vegetarian sausages.
- Add finely sliced red onions for extra crunch if desired.
