Ultimate Nachos Recipe
Description
The Ultimate Nachos Recipe combines browned ground beef seasoned with taco spices and creamy refried beans spread over crunchy tortilla chips. A generous layer of shredded cheddar and Monterey Jack cheese melts over the top in the oven, creating a gooey, savory base. Pickled jalapeños introduce a mild kick that complements the richness. Once baked, the dish is crowned with fresh diced tomatoes, red onion, avocado, a dollop of sour cream, and chopped cilantro to give a fresh contrast to the warm, cheesy nachos.
The nachos can be served as a hearty appetizer or casual meal, perfect for sharing. The mix of melted cheese and seasoned beef with the creamy and crisp fresh toppings creates balanced flavors and varied textures in every bite.
Refried beans can be substituted with pinto or black beans, and different types of chips like cassava or plantain chips can be used to vary texture and flavor according to preference.
Ingredients
For the Nachos
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1 (16-ounce/454g) can refried beans
- ¼ cup water
- 1 (13-ounce/368g) bag tortilla chips
- 2 cups cheddar cheese shredded, mix of cheddar and Monterey Jack
- 2 cups Monterey jack cheese shredded, mix of cheddar and Monterey Jack
- ¼ cup jalapeños pickled
For the Toppings
- 3 Roma tomato diced
- ½ cup red onion diced
- 1 avocado diced
- ⅓ cup sour cream
- ¼ cup cilantro roughly chopped, fresh leaves
Instructions
- Preheat the oven to 400°F(200°C).
- Add the ground beef to a skillet over medium heat and cook for about 5 minutes, using a spatula to break up the meat as it cooks. Drain any fat. Then add the taco seasoning and cook for 5 minutes more, until browned and slightly crispy.
- Add the refried beans and water to the skillet and stir until combined.
- On a rimmed sheet pan, add a layer of tortilla chips and top with the ground beef mixture, cheese and jalapenos. Bake for about 10 to 15 minutes, until the cheese is melted and the edges of the tortilla chips are golden.
- Remove from the oven and add the diced tomatoes, onion, avocado, sour cream, and cilantro. Serve while warm.
Notes
- You can replace refried beans with pinto beans or black beans if desired.
- Try cassava chips or plantain chips instead of tortilla chips for a different crunch.
