Ultimate Spicy Beef Nachos

Seasoned ground beef with crispy tortilla chips, Mexican cheeses, fresh guacamole, sour cream, jalapenos, fresh salsa, green onions, and cilantro make the best beef nachos!

Ingredients

Spicy Beef:

  • 2 Tablespoons neutral cooking oil generic cooking oil
  • 1 onion finely chopped
  • 1 lb. ground beef 80-85% lean, lean
  • 2 Tablespoons chili powder
  • 1/2 teaspoon garlic powder
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 Tablespoons tomato paste
  • 1/2 cup water

Toppings:

  • 1 tortilla chip or homemade, large bag
  • 1 - 16 ounce refried beans spicy jalapeno; canned
  • 4-5 cups Mexican cheese shredded
  • 1 cup sour cream or Mexican crema
  • guacamole homemade
  • 1 jalapeño sliced (or jarred jalapeno slices)
  • salsa homemade; restaurant style recipe
  • 2 green onions (sliced)
  • cilantro (chopped)

Instructions

  1. Heat oil in a large skillet over medium heat. Cook onion until until softened, about 7-8 minutes. Add ground beef increase heat to medium-high heat and cook, breaking meat into small pieces until no longer pink -- about 6 minutes. Add chili powder, garlic powder, cumin, salt, and pepper and stir to coat. Add tomato paste and water and cook for 6-8 minutes longer.
  2. Transfer to plate lined with paper towels to soak up grease.
  3. Heat oven to low broil.
  4. Place refried beans in a microwave-safe bowl. Heat in microwave for 1 minute or until nice and warm and easy to stir. If desired, stir in chopped jarred jalapenos.
  5. Line large baking sheet with tortilla chips.
  6. Top chips with warmed refried beans and spicy beef. Top with cheese. Broil for 2-4 minutes, or until cheese is melted, keeping a close eye on it.
  7. Top with sour cream, avocados, jalapenos, green onions, cilantro, and salsa.
