Ultimate Veggie Sandwich

The Ultimate Veggie Sandwich layers fresh, thinly sliced vegetables like tomato, cucumber, red bell pepper, and romaine lettuce with a creamy homemade pimento cheese spread on toasted bread. The sandwich balances the crispness of garden vegetables with the rich, tangy pimento cheese, enhanced by spices like garlic powder and smoked paprika, making for a hearty yet fresh handheld meal suited for lunch or a casual dinner.

Description

This sandwich features two slices of toasted bread spread generously with homemade pimento cheese made from cream cheese, sharp cheddar, mayonnaise, diced pimentos, and seasonings such as garlic powder and paprika. The pimento cheese adds a creamy, tangy layer that complements the assortment of fresh vegetables including romaine leaves, tomato slices, cucumbers, grated carrot, and thinly sliced red bell pepper.

Optional extras like sprouts, bell peppers, onions, hummus, or mayonnaise can be added for varied texture and flavor. The sandwich is assembled by layering the prepared vegetables on one slice spread with pimento cheese, then topping with the second slice spread with optional condiments or left plain, then cut in half for serving.

Yielding two sandwiches, the recipe can be scaled as needed. The use of fresh, crisp vegetables alongside the rich spread creates a combination of textures and flavors. The pimento cheese mix can be prepared ahead and chilled, making sandwich assembly quick and flexible.
