Description
The casserole preparation begins by sautéing onions and ground beef with avocado oil or butter, cooking until browned and draining excess fat while keeping some for flavor. Chopped bell peppers are added and steamed until soft, then seasoned with oregano, garlic salt, red pepper flakes, and salt and black pepper to preference.
Cauliflower rice and half of the shredded sharp cheddar cheese are mixed into the meat and vegetable mixture, then transferred to a greased casserole dish. Covered with foil, it bakes at 375°F for 25 minutes, followed by removing the foil to add the remaining cheese and broiling for a few minutes to melt and brown the top.
The casserole has a rich flavor profile with the sharpness of cheddar complementing the beef and the slight heat from optional red pepper flakes. Cauliflower rice adds a subtle texture contrast and reduces the carb content compared to traditional rice or stuffing.

Ingredients
- 2 tablespoons avocado oil or butter
- 1 pound ground beef
- 1/2 cup onion chopped
- 2 bell pepper chopped
- 3 cups cauliflower rice
- 1 14 ounce diced tomato any variety
- 2 1/2 cups sharp cheddar cheese shredded (divided
- 1 tablespoon oregano
- 1 teaspoon garlic salt
- 1/4 teaspoon red pepper flakes optional
- salt to taste
- black pepper to taste
Instructions
- Preheat oven to 375 degrees. Lightly grease a 9" x 13" casserole dish and set aside.
- In a medium skillet saute onion with oil or butter.
- Add meat and cook until done. Drain excess fat (1-2 tablespoons left in pan is ok)
- Add chopped bell peppers to skillet over medium heat. Cover and let steam. Stir ingredients.
- Once pepper is soft, add oregano, garlic salt and pepper flakes (optional). Season with salt and pepper.
- Place in casserole dish and add cauliflower crumbles. Fold in 1 1/2 cups of shredded cheese. Mix thoroughly. Cover with foil and place in the oven for 25 minutes.
- Remove foil and add remaining cheese. Place under and boil for 2-3 minutes.
