Description

Unstuffed Cabbage Rolls feature sautéed ground beef with garlic and onions, to which shredded cabbage, chopped canned plum tomatoes, water or broth, and uncooked long-grain rice are added. Seasonings like oregano, thyme, salt, and red pepper flakes are included for balanced flavor. The mixture is cooked covered on low-medium heat to soften the rice and cabbage and merge flavors. Removing the cover toward the end allows excess liquid to evaporate and thicken the dish. The texture is tender with the distinctness of rice grains and mild cabbage flavors blending with the savory beef and tomatoes. This one-pot approach reduces prep compared to rolling individual cabbage leaves.

Serving as an easy weeknight meal, leftovers store well in the refrigerator for up to three days and freeze for two to three months. Thaw overnight before reheating on the stove or in the microwave.   • 2-3 tablespoons olive oil
  • 1-2 clove garlic minced
  • 1 small onion chopped
  • 1 pound ground beef lean
  • 4 cups cabbage shredded or finely chopped
  • 1 plum tomatoes Marzano variety, chopped, canned, 14 ounces, nothing added
  • cups water or broth (homemade or store bought
  • ¾ cup rice uncooked, long grain
  • ½-1 teaspoon oregano
  • 1-2 pinches hot pepper flakes if desired
  • ½ teaspoon salt
  • 1-2 pinches thyme optional
  • 4-5 fresh basil or parsley, chopped, or more if desired

Instructions

  1. In a large frying pan add the olive oil, garlic, onion, and ground beef, cook on medium heat until almost all browned.
  2. Then add the cabbage, tomatoes, water and rice, stir to combine, add the spices and combine. Cook over low-medium heat half covered for approximately 30 minutes or until cooked and thickened. The last 10 minutes remove the lid to thicken. Enjoy!

Notes

  • Store leftovers in airtight containers in the fridge for up to 3 days.
  • Freeze leftovers in freezer-safe containers for 2-3 months; thaw overnight in the fridge before reheating.
  • Reheat using microwave, oven, or stove skillet to desired temperature.
