Description
Unstuffed Peppers combine browned Italian sausage cooked with onion and garlic and simmered with crushed and diced tomatoes, tomato paste, and Worcestershire sauce for depth of flavor. Uncooked rice cooks in the tomato mixture absorbing the liquids and spices including Italian herbs and basil, softening to tender grains.
After initial simmering, diced bell peppers are stirred in and cooked until tender, integrating their sweetness and color throughout. The mixture finishes with shredded mozzarella cheese stirred in and sprinkled on top, adding creamy and gooey texture. A resting period after cooking lets flavors meld and the rice fully absorb moisture.
This simple one-pan version of stuffed peppers saves time and preparation effort, making it suitable for everyday meals. It pairs well with a green salad or crusty bread for a filling dinner.
Ingredients
- 1 pound Italian sausage mild or hot
- 1 onion diced, small
- 4 cloves garlic minced
- 14 ounces crushed tomatoes canned
- 1 tablespoon tomato paste
- 14 ounces diced tomatoes canned, with juices
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian dried herbs
- 1 teaspoon basil dried
- 1/2 cup long-grain white rice uncooked
- 1 ⅔ cup water or as needed
- salt to taste
- black pepper to taste
- 4 bell pepper diced - any color will work
- 1 cup mozzarella cheese shredded
Instructions
- Brown the sausage in a large pan or Dutch oven over medium heat, breaking it apart with a wooden spoon.
- Once browned, add onion and garlic and cook until no pink remains on the sausage meat. Drain fat.
- Add tomato paste and Worcestershire sauce and stir.
- Add tomatoes, rice, water, Italian seasoning, basil, and salt and pepper to taste. Bring to a boil, reduce heat to simmer, cover with the lid, and cook for 10 minutes.
- Stir in diced peppers and cook for 15-20 minutes or until rice is tender.
- Stir 1/2 of the cheese into the sausage mixture.
- Remove from heat, let it rest covered for 10 minutes before serving.
- Garnish with parsley and remaining cheese when serving.
