Unstuffed Peppers
Description
This recipe starts by browning Italian sausage with diced onion and garlic to build a savory base. Canned crushed and diced tomatoes are added along with uncooked rice and water to create a flavorful liquid for simmering. Worcestershire sauce and Italian seasoning enhance the depth of flavor. Once the rice is partially cooked, diced bell peppers are stirred in and cooked further until tender. The dish is finished by stirring in shredded mozzarella cheese, which melts to add a mild, creamy texture. Allowing the mixture to rest with the cheese covered helps it set before serving.
The result is a cozy, comforting dish combining the sweetness and slight crunch of bell peppers with juicy, spiced sausage and soft rice. Simple adjustments like adding more water if the rice needs it ensure correct cooking. The option to broil the cheese before serving adds a lightly browned, savory topping if desired.
Ingredients
- 1 pound Italian sausage
- 1 small onion diced
- 2 cloves garlic
- 14 ounces crushed tomatoes canned
- 14 ounces diced tomatoes with juices, canned
- ½ cup long grain white rice uncooked
- 1 ⅔ cup water or as needed
- 1 tablespoon Worcestershire sauce
- ½ teaspoon Italian seasoning
- salt to taste
- black pepper to taste
- 4 bell pepper any color, diced
- ½ cup mozzarella cheese shredded
Instructions
- In a large pan, brown sausage, onion & garlic over medium heat until no pink remains. Drain fat.
- Add tomatoes, rice, water, Worcestershire sauce, Italian seasoning, and salt & pepper to taste. Bring to a boil, reduce heat to simmer and cook covered 10 minutes.
- Stir in diced peppers and cook an additional 15-20 minutes or until rice is tender.
- Stir and add cheese on top. Remove from heat, cover with a lid and rest 10 minutes before serving.
Notes
- Add water gradually during cooking to ensure the rice becomes tender without drying out the mixture.
- For a browned cheese topping, broil the shredded mozzarella before serving.
