Valentine Snack Mix

Valentine Snack Mix is a sweet and crunchy mixture made by coating freshly popped popcorn with melted almond bark, then topping it with colorful M&M's and dry roasted salted peanuts. As the coating cools and hardens, it binds the snack components into clumps that combine sweet, salty, and crunchy textures in each bite.

Description

This snack mix recipe uses popped popcorn as the base, which is coated evenly with melted almond bark—similar to white chocolate. The almond bark is melted carefully in a double boiler or microwave to keep a smooth consistency. Once coated, M&M's and dry roasted salted peanuts are sprinkled over the mixture before the coating cools and sets, helping to keep the candy pieces intact and prevent melting from heat.

As the coating hardens over waxed paper, the popcorn clusters stick together, creating chunks that combine the lightness of popcorn with the sweetness of candy and the savoriness of peanuts. This mix offers a contrast of colors and flavors, making it suitable as a festive snack or treat.

The recipe calls for a large mixing bowl to accommodate the volume and ease stirring and spreading. The snack mix can be allowed to cool fully before breaking it into pieces for serving or storage.

Ingredients

Servings
  • 1 almond bark 1 lb, package
  • 12 c. Popcorn about 1/2 c. kernels, popped
  • 1 1/2 c. M&M's
  • 1 1/2 c. dry roasted salted peanuts

Instructions

  1. Pop popcorn and place in a HUGE mixing bowl. The biggest you have. You’ll need it and it’s much easier to mix if you aren’t struggling to keep it in the bowl.
  2. Put the almond bark in a double boiler or microwave safe bowl and melt according to directions on the package. Be careful not to go to long without stirring it or it will get hard and not mix.
  3. Pour the melted almond bark over the popcorn and stir until everything is well coated. Spread out on waxed paper. Sprinkle M&M's and peanuts over mix before it cools. If you mix it right into the popcorn in the bowl the M&M's will start melting. Let sit until completely dry and then break into clumps.
