Vanilla Almond Rice Pudding Recipe

Vanilla Almond Rice Pudding blends Arborio rice with milk, half and half, and almond and vanilla flavorings for a creamy, textured dessert. The rice is cooked slowly by gradually adding milk, stirring to absorb liquid and develop thickness. Toasted almonds sprinkled on top add contrast in crunch and a nutty note. The pudding can be served warm, showcasing its comforting, subtly sweet character.

Description

The Vanilla Almond Rice Pudding Recipe uses Arborio rice cooked gently in butter and milk, absorbing liquid slowly while stirred to achieve a creamy consistency without overcooking. Half and half is added near the end for richness, while sweeteners adjust the final taste. Almond extract and vanilla bean paste give distinct flavor layers. The slow cooking process ensures the rice breaks down slightly but retains some bite, combined with a luscious, thickened texture.

Sprinkling toasted almonds on top provides a crunchy contrast and intensifies the almond flavor. Serving the pudding warm highlights its comforting qualities, making it suitable for dessert or a softly sweet snack.

This recipe requires patience during cooking to develop a balanced texture and avoid overly thick or runny results. Adjusting milk quantities can customize consistency to preference.

Ingredients

Servings
  • 1 tablespoon butter
  • 1 cup arborio rice
  • 3 1/2 cups milk skim
  • 1/2 cup half and half fat free
  • pinch salt
  • 4 tablespoons truvia sweetener or splenda or regular sugar
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon vanilla bean paste
  • 1/4 cup almonds toasted

Instructions

  1. In a large pot, melt butter and stir in arborio rice to coat grains. Pour in enough milk to cover the rice by 1/3 inch or so. Continuously stir the rice until the milk has been absorbed and mixture turns very thick. Continue this process until all milk has been added.
  2. Stir in half & half and Truvia until rice is cooked to your liking and the desired consistency is reached. Feel free to add in a few more splashes of milk to make the pudding thinner or cook it longer to have it thicker.
  3. Remove from heat and stir in almond extract and vanilla bean paste. Top with toasted almonds and serve warm.
