Description
The Vanilla Beet Freakshake mixes frozen bananas, vacuum-packed cooked beetroot, almond milk, vanilla extract, and maple syrup in a blender until smooth. This combination yields a creamy, naturally sweet milkshake with subtle earthiness from the beet and rich banana flavor. The use of frozen bananas enhances creaminess and chill.
Whipped coconut cream made from chilled coconut milk and powdered sugar is prepared separately and added as a topping to the milkshake. This cream provides a dairy-free, fluffy garnish with mild sweetness. Decorating with chocolate syrup, fresh or dried berries, and small biscuits adds varied textures and visual appeal.
The shake is suitable as a healthier indulgence or snack for kids, combining natural sweetness and vibrant colors with plant-based ingredients. Leftover coconut water from the can is usable in drinks or smoothies, reducing waste.
Choosing overripe bananas to freeze ensures optimal sweetness and smooth texture in the shake. If the whipped coconut cream seems too soft, a small amount of cornstarch can stabilize it without affecting taste.
Ingredients
- 3 banana see note, frozen
- 1 beetroot I used vacuum-packed in water, cooked
- 350 ml almond milk
- 1-2 tablespoon maple syrup depending on sweetness of bananas
- 1 teaspoon vanilla extract
Whipped coconut cream (or substitute whipped cream)
- 1 can coconut milk 400ml/15oz can) chilled overnight in the fridge, can
- 1 tablespoon powdered sugar icing sugar
To decorate
- chocolate syrup
- berries sprinkles, dried fruit, biscuits (I used Organix mini gingerbread men and mini apple rice cakes, optional, for topping
Instructions
- First, make the whipped coconut cream. Scoop the thick, chilled coconut cream (leaving behind the coconut water*) into a large bowl. Add the icing sugar and whip for a few minutes or until smooth and thick. Refrigerate it to thicken further and until ready to use. The thickness of the cream can vary from can to can, but if it’s too soft even after whipping, beat in a teaspoon of cornflour/cornstarch to thicken it, but use sparingly so it can't be tasted.
- For the vanilla beet milkshake, add all ingredients to a blender and whiz until smooth.
- To serve, divide the beet milkshake between glasses, top with the whipped coconut cream and add toppings!
Notes
- Save the coconut water from the can for a refreshing drink or add it to smoothies.
- Freeze overripe bananas peeled and chunked to use in smoothies and milkshakes for natural sweetness and creaminess.
- If whipped coconut cream is too soft, a small amount of cornstarch can be added to thicken it gently.
