Vanilla Iced Latte

The Vanilla Iced Latte combines homemade vanilla syrup with espresso and milk served cold over ice. The syrup's balance of sugar and vanilla provides sweetness and aromatic depth, while the espresso offers rich coffee flavor. Adjust milk and syrup amounts to taste for a refreshing, creamy beverage.

Description

This Vanilla Iced Latte recipe starts with a simple syrup made by dissolving sugar in water and infusing it with vanilla bean paste or extract for fragrant sweetness. Once cooled, the syrup is combined with freshly brewed espresso, or a strong coffee alternative, to form the coffee base.

Filling the glass with ice and topping with milk of choice—dairy or dairy-free—creates a cold, creamy drink. The proportion of syrup and milk can be varied according to preference, allowing control over sweetness and creaminess. This method produces a refreshing latte balanced to personal taste.

The syrup makes about ¾ cup, yielding multiple drinks when using about 2 tablespoons per serving. The recipe suggests whole milk or oat milk for optimal taste, but any milk variety is acceptable. Store leftover syrup refrigerated for up to two weeks, making it convenient for repeated use.

Ingredients

Servings

Vanilla Syrup

  • ½ cup granulated sugar
  • ½ cup water
  • ½ Tablespoon vanilla bean paste or vanilla extract

Latte

  • 3 ounces espresso or ½ cup strong coffee, 2 shots
  • 2 Tablespoons Vanilla Syrup more or less to taste
  • 4-6 ounces milk more or less to taste, of choice
  • ice

Instructions

  1. Vanilla Syrup: In a small saucepan, combine the sugar and water over medium heat. Bring to a simmer until sugar is dissolved. Remove from heat and stir in vanilla paste (or extract). Use immediately or let cool and store in a jar in the fridge until ready to use.
  2. Latte: Brew espresso or strong coffee as needed (or use cold brew concentrate) and add it to a drinking glass. Stir in the vanilla syrup and fill the glass with ice. Top with milk and stir to combine as needed.

Notes

  • Any type of milk can be used, with whole milk or oat milk recommended for best texture and flavor.
  • If substituting brewed coffee for espresso, adjust coffee and milk quantities to achieve the preferred strength.
  • The vanilla syrup yields about 3/4 cup, enough for approximately six servings using 2 tablespoons per drink.
  • Store leftover syrup in an airtight container in the refrigerator for up to two weeks.
