Vanilla Overnight Oats (MUSH Copycat)
Description
This recipe blends water, Medjool dates, almond butter, vanilla extract, and salt into a smooth base, which is then combined with rolled oats and chilled overnight. The dates provide natural sweetness while almond butter adds creaminess and a subtle nutty flavor.
Soaking the oats overnight softens them, giving the mixture a pudding-like consistency without the need for cooking. The vanilla extract enhances the overall flavor, making it a comforting, ready-to-eat breakfast.
You can divide the mixture into individual portions. Variations include swapping almond butter for almond flour or raw almonds, or converting to a chocolate version by replacing vanilla with cocoa powder and adjusting the liquid.
Ingredients
- 1 cup rolled oats old fashioned
- 1 ¼ cups water
- 53 grams date about 4 small dates, Medjool, pitted
- 2 Tablespoons almond butter
- 1 Tablespoon vanilla extract
- ⅛ teaspoon salt omit if almond butter is salted
Instructions
- Add water, dates, almond butter, vanilla and salt into a blender and blend until smooth, about 30 seconds or so.
- Add ⅓ cup rolled oats to three jars or containers.
- Divide the blended date mixture between the three jars. Stir to combine, place in the fridge overnight, or at least a couple hours and enjoy.
Notes
- Almond butter can be substituted with ¼ cup almond flour or 1 oz raw almonds blended smoothly.
- The recipe yields three servings; adjust portions as needed but note macro changes if divided differently.
- To make chocolate overnight oats, replace vanilla extract with 2.5 tablespoons cocoa powder and add an extra ¼ cup water to the mix.
