Vanilla Overnight Oats (MUSH Copycat)

Vanilla Overnight Oats inspired by the MUSH brand combine rolled oats soaked in a creamy mixture of blended dates, almond butter, and vanilla extract. The result is a smooth, naturally sweetened breakfast with a soft and creamy texture. Preparing the oats overnight allows flavors to develop and the oats to soften without cooking.

Description

This recipe blends water, Medjool dates, almond butter, vanilla extract, and salt into a smooth base, which is then combined with rolled oats and chilled overnight. The dates provide natural sweetness while almond butter adds creaminess and a subtle nutty flavor.

Soaking the oats overnight softens them, giving the mixture a pudding-like consistency without the need for cooking. The vanilla extract enhances the overall flavor, making it a comforting, ready-to-eat breakfast.

You can divide the mixture into individual portions. Variations include swapping almond butter for almond flour or raw almonds, or converting to a chocolate version by replacing vanilla with cocoa powder and adjusting the liquid.

Ingredients

Servings
  • 1 cup rolled oats old fashioned
  • 1 ¼ cups water
  • 53 grams date about 4 small dates, Medjool, pitted
  • 2 Tablespoons almond butter
  • 1 Tablespoon vanilla extract
  • teaspoon salt omit if almond butter is salted

Instructions

  1. Add water, dates, almond butter, vanilla and salt into a blender and blend until smooth, about 30 seconds or so.
  2. Add ⅓ cup rolled oats to three jars or containers.
  3. Divide the blended date mixture between the three jars. Stir to combine, place in the fridge overnight, or at least a couple hours and enjoy.

Notes

  • Almond butter can be substituted with ¼ cup almond flour or 1 oz raw almonds blended smoothly.
  • The recipe yields three servings; adjust portions as needed but note macro changes if divided differently.
  • To make chocolate overnight oats, replace vanilla extract with 2.5 tablespoons cocoa powder and add an extra ¼ cup water to the mix.
