Description
This cookie recipe combines oats and mashed bananas as the base, relying on baking powder and baking soda for lift and cinnamon for spice. Ingredients
- 1.5 cups gluten-free oats
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp ground cinnamon
- 2 tbsp nuts I used almonds, chopped
- 2 medium banana mashed
- 1 tbsp apple cider vinegar
- ¼ cup chocolate chips vegan
Instructions
- Preheat the oven to 350 degrees F/180 degrees C.
- Add the oats, baking powder, baking soda and cinnamon to a large mixing bowl and whisk together.
- Add the bananas, apple cider vinegar and stir until all the ingredients are well-combined. Then, fold in the chocolate chips.
- Roll the dough into cookie shapes and arrange them on a sheet of parchment paper on a baking sheet. Bake in the oven for 10-12 minutes.
