Description
This Vegan Caesar Salad uses about 10 cups of chopped romaine lettuce, coated with a homemade or store-bought vegan Caesar dressing. Roasted chickpeas add a crunchy element similar to traditional croutons, enhancing texture and flavor. Optional sliced avocado introduces a smooth contrast and mild richness, complementing the dressing and crisp lettuce.
The salad can be served on a platter for entertaining or in bowls for personal servings. The flavors balance fresh greens, tangy dressing, and savory roasted chickpeas, making it suitable as a side dish or a light main course for 4 to 6 people.
Leftover salad can be stored in an airtight container refrigerated for 3-4 days. Additional optional ingredients like vegan parmesan cheese, cherry tomatoes, or persian cucumbers can be added for variation. For non-vegans, grilled chicken alternatives can be included to increase protein content.
Ingredients
- 3 romaine lettuce chopped, about 10 cups from heads
- 1 ½ cups roasted chickpeas we love Biena ranch flavored roasted chickpeas!
- 1 vegan caesar dressing
- avocado sliced, optional
Instructions
- First make your vegan caesar dressing and set aside.
- Next, you can choose to serve this on a platter or in a bowl. Platters are pretty for entertaining or serving guests and bowls are great for date nights, family dinner and meal prep.
- Toss the chopped romaine with the dressing until well coated, leaving a little dressing for drizzling on top when done. Sprinkle chickpeas generously on top, adding more if you’d like additional crunch. Drizzle with a little more dressing, then serve! Serves 4-6 depending on if you are serving as a main or a side. Feel free to add avocado to the salad as well!
Notes
- Store leftover salad in an airtight container in the refrigerator for up to 3-4 days.
- Biena ranch flavored roasted chickpeas add extra flavor and crunch, but plain roasted chickpeas can be used.
