Description
Vegan Candied Pecans (Oil-free) involve gently toasting pecans over low-medium heat to bring out their natural nuttiness and slightly deepen their color. They are then coated with a mixture of maple syrup, coconut sugar, a choice of warm spices such as gingerbread or pumpkin pie spice, and a pinch of salt. The cooking continues with stirring until the coating thickens and begins to crystallize around the pecans, forming a sweet, crisp shell without added oil.
The pecans are spread out to cool and separate into individual pieces, resulting in a crunchy, sweet nut with spiced nuances from the chosen blend. These candied pecans work well as snacks, salad toppings, or dessert garnishes, providing texture and warmth of flavor.
They keep best in airtight containers for up to two weeks. For a different texture and deeper caramelization, they can be baked after coating at 300°F, with periodic stirring until the coating hardens. Spice blends can be customized to personal preference.
Ingredients
- 2 cups pecans
- 3 tbsp coconut sugar , 4 tbsp for sweeter
- 1 tsp gingerbread spice or pumpkin pie spice or cinnamon
- 1/4 tsp salt
- 2 tbsp maple syrup
Instructions
- Heat a skillet over low-medium heat. Add the pecans and toast until they start to change color slightly. Let them sit for the first 2 mins then stir every half a minute. 6 to 9 mins.
- Add the rest of the ingredients and mix well. Stir continuously. The mixture will thin out then thicken and start to stiffen. Take off heat.
- Transfer to a plate or parchment lined baking sheet and separate the clumps if needed. Cool completely and store in an airtight container for upto 2 weeks. Or gift in jars.
Notes
- To intensify flavor, bake toasted pecans with the maple syrup and spice mixture at 300°F, stirring every 10 minutes until thickened.
- Use pumpkin pie, gingerbread, or chai spice blends based on your taste preference.
