Description

This Vegan Carrot Soup features a base of sautéed garlic and onion cooked in olive oil until translucent, creating a mild aromatic foundation. Large chunks of carrots are simmered with full-fat coconut milk and vegetable stock, infused with curry powder and turmeric, adding warm, earthy tones.

After about 30 minutes of cooking until the carrots are tender, the soup is puréed to a smooth consistency using either a traditional or immersion blender. The resulting soup is creamy with a balanced spice character from the curry and turmeric, making it comforting and flavorful without dairy or animal products.

The soup can be served hot and is suitable as a light starter or main in a vegan meal. Adjust salt and black pepper to taste for seasoning.

Ingredients

  • 5 garlic minced, cloves
  • ½ onion large white, diced
  • 6-8 carrot large, sliced into large chunks
  • 1 ¾ Cup coconut milk full fat
  • ¾ Cup vegetable stock
  • 1 tbsp curry powder
  • ½ tbsp Turmeric
  • olive oil
  • salt to taste, sea salt and freshly ground
  • black pepper to taste, sea salt and freshly ground

Instructions

  1. In a large pot, cook the olive oil, garlic, and onion in a drizzle of olive oil, until the onion is translucent. It will take 3-5 minutes.
  2. Add all of the remaining ingredients and let the soup simmer on low/medium for about 30 minutes, or until the carrots are soft.
  3. Place ingredients in a blender and blend until smooth. Or alternatively, use an immersion blender to puree the soup right in the pot. Serve and enjoy!

Notes

  • Use an immersion blender for easy puréeing directly in the pot, or transfer in batches to a blender.
  • Adjust curry powder and turmeric amounts to taste for spiciness and flavor depth.
