Vegan "Chicken" Broth, Bouillon & Seasoning
Description
The seasoning powder combines nutritional yeast, salt, cane sugar, onion powder, garlic powder, poultry seasoning, turmeric, ground ginger, and black pepper. These ingredients are whisked together into a fine mix, optionally pulsed to reduce flake size for a uniform powder. The blend offers a balance of savory, mildly sweet, and spiced flavors reflective of traditional chicken broth.
To prepare broth, approximately two teaspoons of this powder are dissolved in one cup of hot water, creating a flavorful, salty base for soups, stews, or cooking grains. Freshly ground black pepper provides mild heat, while turmeric and ginger contribute warmth and color. The poultry seasoning adds typical herbaceous notes associated with chicken broth.
This dry blend stores well at room temperature or refrigerated due to its all-dried ingredients and long shelf life. Adding a few drops of mild olive oil to the prepared broth can introduce richness akin to chicken stock. The recipe notes that poultry seasoning can be homemade or store-bought, allowing customization of herbal components.
Ingredients
- ½ cup nutritional yeast Any type is okay, but I highly recommend this non-fortified one by Sari.
- 1 tablespoon salt Feel free to decrease to suit your dietary needs or if you prefer less salty broth, fine sea salt
- 2 teaspoons cane sugar organic, optional
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon poultry seasoning see Notes
- ⅛ teaspoon Turmeric ground
- tiny pinch of ground ginger optional
- ½ to 1 teaspoon black pepper Amount depends on how much you enjoy black pepper, freshly ground
Instructions
- Combine all ingredients in a bowl or lidded jar, and whisk to combine. If the nutritional yeast you're using contains large flakes you may want to pulse the mixture in a blender for a more powdered texture.
- Always whisk or shake before using so that the flavors are well combined. To make broth, use approximately 2 teaspoons powder per 1 cup of hot water (this creates a fairly salty broth). Refer to the post above for more ideas and ways to use this powder.
Notes
- Poultry seasoning can be made at home or substituted with a store-bought blend.
- Add a few drops of mild olive oil to prepared broth for added richness, if including oils in your diet.
- Store the dry seasoning mix in the refrigerator or at room temperature; it has a long shelf life due to its dried ingredients.
