Juicy vegan falafel burger in a pretzel bun served with creamy tahini sauce and crispy and tender sweet potato fries. The best falafel burger I've ever had!

Ingredients
For the falafel burgers and sweet potato fries:
- 4 Pretzel buns frozen
- 3 medium-sized sweet potatoes
- 2 tablespoon tablespoons olive oil + 1
- Salt and freshly ground black pepper to taste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 4 baked falafel patties
- 4 leaves Salad
- 4 slices tomatoes
- 4 slices red onion
- 4-8 slices Pickles
- 4-8 slices Jalapeno pepper
For the tahini sauce:
- 100 grams or 1/2 cup tahini paste
- ml about 60or 1/3 cup warm water
- 1 clove garlic
- 2 tablespoons lime juice
- 1/2 teaspoon ground cumin
- Salt and freshly ground black pepper to taste
- Hot sauce or ketchup optional

Instructions
- PRETZEL BUNS: Preheat the oven to 200 °C or 390 °F. Line a baking tray with a piece of parchment paper and lay the pretzel buns on it to rest for 15 minutes (or follow the instructions on the package).
- SWEET POTATO FRIES: Meanwhile, cut the sweet potatoes into long fry-shaped pieces trying to keep the same size. Toss them with olive oil, ground cumin, smoked paprika, salt and freshly ground black pepper. Arrange them on a parchment-lined baking tray, trying not to overcrowd it. Bake for 15 minutes, then flip over and bake until ready, for about 12 minutes. The baking time highly depends on the size of your fries. Bake the rested pretzel buns for 15 minutes.
- TAHINI SAUCE: Make the tahini sauce: grid the tahini paste, water, garlic, lime juice, cumin, a pinch of salt and freshly ground black pepper in a food processor or blender for a few minutes. The sauce should be white and smooth. Adjust the thickness by adding more water or more tahini paste.
- ASSEMBLE THE BURGERS: Fry the falafel patties in a frying or grill pan with 1 tablespoon of olive oil on medium-high heat for about 2 minutes on each side (or don't if they are freshly baked). Slice the baked pretzel buns in halves and arrange the salad leaves on the bottom halves. Put the falafel patties on top. Pour some tahini sauce. Next go tomato slices, then jalapeno, pickles and onion slices. Serve with sweet potato fries and hot sauce or ketchup (optional). Use the rest of tahini sauce as a dip for the sweet potato fries. Enjoy!
