Vegan French Onion Dip

This Vegan French Onion Dip uses soaked cashews blended with golden sautéed onions, apple cider vinegar, and seasoning to create a rich, creamy, plant-based dip. Slow-cooked onions provide a deep, caramelized flavor while the cashews contribute a smooth texture. The dip can be eaten immediately or chilled to enhance flavor melding.

Description

The Vegan French Onion Dip recipe centers on raw cashews soaked overnight and blended with finely cooked yellow onions, apple cider vinegar, garlic powder, salt, and water. The cashews offer a creamy, nutty base when blended, while the slow sautéing of onions over low heat for 15-20 minutes—covered then uncovered—develops a deep, sweet, caramelized flavor characteristic of French onion preparations. This combination yields a dip that is rich and smooth without using dairy.

Processing the soaked cashews with the cooked onions and other ingredients into a creamy mixture forms the dip’s base. Adjusting water content during blending controls thickness for preferable consistency. Chilling the dip for 1 to 2 hours is recommended to allow flavors to meld, but it is also enjoyable right after making.

This dip is a suitable vegan alternative for serving with chips, vegetables, or crackers as a snack or appetizer. The tang from apple cider vinegar balances the sweetness of the onions. Seasonings can be adjusted to taste. For quicker preparation, hot water soaking can replace overnight soaking, though this may slightly reduce creaminess.

Ingredients

Servings
  • 1 cup cashews soaked overnight, raw
  • 1 ½ cups yellow onion finely chopped
  • 1 teaspoon of oil medium-high heat
  • 1 ½ teaspoons salt or more to taste
  • ½ teaspoon garlic powder
  • cup of water
  • 1 Tablespoon apple cider vinegar or white vinegar

Instructions

  1. Place raw cashews in a bowl and cover with water by about 2-3 inches. Place in refrigerator and let soak overnight. If short on time, simply cover cashews with boiling water and let them soak as long as possible. The ideal soak time is 8 hours, the minimum is 2 hours.
  2. Drain cashews and rinse in a colander. Set aside.
  3. In a skillet, saute finely chopped onion in 1 teaspoon of medium heat oil. Cook on low heat, covered for 15 minutes, then remove the cover and cook an additional 5 minutes until golden brown.
  4. In a food processor, combine all ingredients and process for 3 to 4 minutes on high until rich and creamy. Add more water and scrape down the sides as needed. Ideally, chill for 1 to 2 hours before serving (but you can eat it immediately as well).

Notes

  • Customize salt, vinegar, and sweetener levels to personal taste preferences.
  • Doubling the amount of onions increases the dip’s onion intensity.
  • The dip can be served immediately but improves after chilling for 1 to 2 hours.
  • For faster preparation, soak cashews in hot water for at least 1-2 hours instead of overnight.
