Vegan French Toast
Description
Vegan French Toast replaces eggs with flaxseed meal and uses almond milk flavored with maple syrup, vanilla, and cinnamon to infuse sweet, warm spices into the bread. The ciabatta bread, sliced thick and slightly stale, absorbs the mixture only briefly to avoid a soaked interior. Cooking on medium heat with coconut oil creates a crisp, browned crust while maintaining a tender middle. The finished slices balance soft and crunchy textures and are ideal for serving warm topped with maple syrup and fresh strawberries, complementing the lightly spiced batter. This recipe works well as a vegan breakfast or brunch option with familiar flavors reinterpreted without animal products.
Ingredients
- 6 lices ciabatta bread sliced about ¾-inch thick, day-old
- 1 cup almond milk Holiday Nog Variety
- 1 tablespoon maple syrup plus more for serving
- 2 tablespoons flaxseed meal
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- Pinch salt
- coconut oil for cooking, spray
- strawberries sliced, for serving
Instructions
- In a large shallow bowl, whisk together the almond milk, maple syrup, flaxseed meal, cinnamon, salt and vanilla extract. Allow mixture to set and thicken for 10 minutes.
- Whisk mixture again. Then, place a slice of bread into the shallow bowl and push the bread into the mixture to make sure the bread is coated, but not soaked.
- Heat a large griddle on medium heat, spray with coconut oil and place the drenched slices of bread on the pan. Cook the French toast until they’re golden brown on the bottom, about 3-5 minutes, then flip over and cook until the other side is golden brown, another 3-5 minutes.
- Serve warm with maple syrup and fresh fruit.
Notes
- Day-old ciabatta bread is best to prevent the slices from becoming too soggy when soaked.
- Allow the almond milk and flaxseed meal mixture to thicken for 10 minutes before soaking the bread to ensure proper binding.
- Adjust maple syrup amount in the soaking mixture and for serving based on desired sweetness.
- Coconut oil spray helps achieve a golden crispy texture on the griddle without sticking.
- Any variety of non-dairy milk can substitute the almond eggnog milk as noted.
