Description
This Vegan Greek Millet Salad starts by boiling millet until tender and draining it well. While still warm, the millet is dressed with a mixture of extra virgin olive oil, fresh lemon juice or red wine vinegar, dried oregano, pressed garlic, salt, and pepper. This warm dressing soaks into the millet, infusing it with vibrant flavors. After cooling, diced cucumbers, halved cherry or grape tomatoes, chopped red onion, and chopped romaine lettuce are tossed in, giving the salad a crisp and fresh texture contrast against the fluffy grains.

Ingredients
- 1 ½ cups millet uncooked
- 6 cups of water
- ⅓ cup olive oil extra virgin
- 3-4 Tablespoons lemon juice fresh, or red wine vinegar
- 2 teaspoons oregano dried
- 1-2 garlic cloves, pressed
- sea salt to taste
- black pepper to taste
- 1 ⅓ cups cucumber diced
- 1 ½ cups tomato cherry or grape, halved
- ½ cup red onion diced
- 3 cups romaine lettuce chopped
Instructions
- Bring the water to a boil in a medium saucepan. Add the millet and boil for 20 minutes. Drain well in a fine-mesh strainer and transfer to a large bowl.
- While the millet is cooking, make the dressing: Whisk together the olive oil, lemon juice, oregano, garlic, salt, and pepper and pour over millet while it is still warm. Mix well and set aside to cool.
- Once the millet has cooled, add remaining ingredients and toss well to mix. Taste for seasoning and place in the fridge at least 30 minutes before serving.
Notes
- Add the warm dressing to cooked millet to help the grains absorb the flavors more completely.
- Let the salad chill for at least 30 minutes before serving to allow the flavors to meld.
