Vegan Gumbo

This vegan gumbo is packed with fresh veggies and plenty of Creole flavor, and it's ready in just 30 minutes!

Ingredients

  • ¼ cup vegan butter
  • 1 onion sliced thick
  • 4 talks celery sliced thick
  • 2 green pepper sliced
  • 2 cloves garlic minced
  • ¼ cup flour
  • 2 tablespoons creole seasoning
  • 3 cups vegetable broth
  • 1 lb potato peeled and cubed
  • 1 can red kidney beans rinsed and drained
  • 1 bay leaf
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large stockpot, melt the butter over medium heat, then add the onion, celery, green peppers and cook, stirring frequently, until veggies start to soften
  2. Add the garlic and cook one additional minute, then sprinkle the flour, creole seasoning over the veggies and stir
  3. Gradually stir in the vegetable broth.
  4. Then add in the potatoes and kidney beans and bay leaf
  5. Bring mixture to a simmer, cover, and cook for 30 minutes
  6. Add salt and pepper to taste, serve warm with rice
