Description

Vegan Ham uses a combination of chickpeas and seasonings blended into a smooth base, mixed with vital wheat gluten to form a dough that is kneaded and shaped into a loaf. Steaming the loaf firms it up and cooks it evenly without drying it out. The steamed seitan loaf is then scored and coated with a sweet glaze made from brown sugar, maple syrup, Dijon mustard, cinnamon, and apple cider vinegar before roasting at a high temperature to caramelize the exterior.

The result is a firm yet tender vegan roast with smoky, savory notes from liquid smoke and spices, balanced by the sweet and tangy glaze. The texture is dense with a chew reminiscent of traditional ham. Garnishes like pineapple rings and cloves enhance both presentation and flavor.

This preparation can be made in advance up to the steaming stage and refrigerated, then glazed and roasted when needed. The steaming step requires monitoring to ensure the loaf is cooked through, which depends on its size. Variations in glaze ingredients allow for flavor customization.

For vegan ham:

  • 15 ounces chickpeas drained, rinsed
  • ¾ cup vegan broth no-beef flavored, see notes
  • 2 tablespoons olive oil
  • 2 tablespoons nutritional yeast
  • ¼ cup tomato paste
  • 1 tablespoon liquid smoke optional
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon pork seasoning
  • ¼ teaspoon cloves ground
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • cups vital wheat gluten
  • ¾ cups water for steaming, boiling

For glaze:

  • 4 teaspoons vegan butter melted
  • ½ cup brown sugar packed
  • ½ cup maple syrup
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon ground cinnamon
  • 2 teaspoons apple cider vinegar

For decoration / serving:

  • clove optional, whole
  • pineapple for garnish, optional, slices in syrup

Instructions

  1. In a food processor, blend the chickpeas, no-beef broth, olive oil, nutritional yeast, tomato paste, liquid smoke, maple syrup, smoked paprika, pork seasoning, ground cloves, onion powder, and garlic powder until smooth.
  2. Transfer the mixture to a large mixing bowl and add vital wheat gluten. Mix with a spatula or spoon and knead with your hands about 10 times. Shape into a loaf.
  3. Wrap the loaf in foil.
  4. Place the loaf on a steamer basket in a large pot with 3 cups of water, but don't let it sit in the water. Cover, bring to a boil and reduce heat to simmer for 1 hour. Add more water if necessary.
  5. Remove from heat and let the loaf cool for a few minutes. Remove from the foil.
  6. Preheat the oven to 425°F.
  7. In a medium bowl, mix together the glaze ingredients and set aside. Place the steamed loaf in a casserole dish or pan with a rim and score in a crisscross pattern. Optional: place pineapple rings around the roast and stick whole cloves in the diamonds.
  8. Pour half of the glaze over the loaf and bake for 30 minutes, basting every 10 minutes. Save some glaze for the end!
  9. Let cool for 15 minutes, remove whole cloves and serve. Slice thinly and serve while hot.

Notes

  • Check the seitan after one hour of steaming; cooking time varies with loaf size and it may need up to 30 minutes longer.
  • If you don’t have a steamer basket, create one with foil balls and a heat-safe plate inside a pot to keep the loaf out of water.
  • You can prepare the loaf up to the steaming step and refrigerate it before glazing and roasting later.
  • Glaze ingredients can be adjusted for different flavor profiles beyond the traditional mix suggested.
