Ingredients

Servings

For Ceviche

  • 2 cans heart of palm diced
  • 1 avocado diced, ripe
  • 1/2 red onion diced
  • 1 jalapeño seeded, deveined and chopped
  • 1/2 cup red pepper
  • cilantro chopped
  • salt to taste
  • black pepper to taste

Vinaigrette

  • 2 tablespoons soybean oil vegetable oil
  • 1/4 cup lime juice 3 limes, 2 tablespoons
  • 2 tablespoons orange juice

Instructions

  1. Place all ceviche ingredients in a bowl
  2. In a smaller bowl, whisk the vinaigrette ingredients
  3. Slowly add the vinaigrette into the ceviche until the desired flavor is achieved
  4. Note: you may not need all the vinaigrette
  5. Check for seasoning and serve
  6. Enjoy!
