Vegan Orange Sweet Potato Smoothie

A sweet, savory, creamy, delicious smoothie with a sweet potato and oranges.

Ingredients

Servings
  • 1 cup almond milk I use Silk brand, unsweetened
  • 2 orange clementine oranges work well - peeled and seeds removed, small
  • 1 sweet potato approximately one cup - do not use the peel, baked, medium
  • teaspoon ginger fresh, minced
  • 1 date medjool, pitted
  • teaspoon ground cinnamon
  • 3 ice cubes

Instructions

  1. Blend all of the ingredients in a high powered blender until smooth and creamy.
  2. Enjoy!
  3. NOTE: If you like your smoothie thinner add more almond milk. If you don’t like fresh ginger, leave it out. Make this your own.
