Vegan Protein Balls

Vegan Protein Balls combine rolled oats, almond butter, maple syrup, vanilla protein powder, and mini chocolate chips into a thick dough that is hand-shaped into small balls. These no-bake, bite-sized snacks offer a chewy texture with subtle sweetness and a hint of vanilla, making them a practical protein-rich option for a quick energy boost or snack.

Description

These Vegan Protein Balls are created by mixing old-fashioned rolled oats with almond butter and maple syrup, adding vanilla-flavored protein powder and mini chocolate chips for taste and texture. The mixture starts thick but becomes pliable with mixing and kneading by hand, allowing for shaping into uniform balls. The oats provide chewiness and fiber, while almond butter adds creaminess and a nutty flavor, all complemented by the protein powder's vanilla notes and sweet bursts from the chocolate chips.

The protein balls require no baking and can be stored in a covered container in the refrigerator or freezer, making them convenient to prepare ahead. Their size and composition make them suitable as a quick snack or between-meal energy source for those seeking plant-based protein options.

Ingredients

Servings
  • 1 ½ cups rolled oats old fashioned
  • 1 cup almond butter drippy
  • ¼ cup maple syrup
  • 2 coops protein powder 50-60 grams, vanilla
  • 2 Tablespoons mini chocolate chips

Instructions

  1. Place oats, almond butter, maple syrup, protein powder and chocolate chips in a large bowl.
  2. Stir to combine. Getting the mixture to combine takes a little arm muscle and it may seem too thick at first, but it will come together as you keep mixing. I used my hands to knead the dough near the end and that seems to help.
  3. Once combined, use a small cookie scoop to scoop and form the dough into balls.
  4. Store in a covered container in the fridge or freezer.
