Vegan Quinoa Summer Salad

Ingredients

  • 3 cups quinoa cooked
  • 1 cucumber large
  • 10-12 cherry tomato
  • 1 red onion large
  • 1 chickpeas canned
  • ½ black beans canned
  • ½ White beans canned
  • lemon juice of ½ lemon
  • basil chopped, fresh, handful, leaves
  • spinach leaves chopped, fresh baby, handful
  • 1 tablespoon extra-virgin olive oil
  • sea salt to taste
  • black pepper to taste

Instructions

  1. Finely chop the cucumber, onion and tomatoes and place together with the cooked quinoa into a large salad bowl.
  2. Place chickpeas, black beans and white beans in a colander, and rinse under fresh running water. Drain well and add them into the salad bowl.
  3. Add in lemon juice, basil and spinach leaves, and season with olive oil, salt & pepper to taste. Mix all the ingredients until combined.
  4. Serve immediately, or cover with cling film and refrigerate until ready to serve.
