Vegan Ranch Dressing
Description
The Vegan Ranch Dressing starts by curdling plant-based milk with apple cider vinegar to simulate buttermilk. This base is combined with vegan mayonnaise, freshly squeezed lemon juice, crushed garlic, Dijon mustard, onion powder, and nutritional yeast. Chopped chives and fresh or dried dill provide herbal notes. The mixture is whisked until smooth and can be adjusted with lemon juice or vinegar for acidity and salt or pepper for seasoning.
The dressing can be served chilled or immediately, offering a creamy and tangy profile reminiscent of traditional ranch. It works well with salads, as a dip for vegetables or snacks, and stores well for about a week in an airtight container.
If the dressing taste is too sharp, a bit of unsweetened vegan yogurt can be added to mellow the flavor. This dressing accommodates dairy-free and vegan diets without sacrificing classic ranch characteristics.
Ingredients
- 1 tablespoon plant-based milk of choice, unsweetened
- 1/4 teaspoon apple cider vinegar
- ½ cup vegan mayonnaise
- 1 tablespoon lemon juice more as needed, freshly squeezed
- 1 garlic crushed with a press or grated, large or 2 small cloves
- ½ teaspoon Dijon mustard
- ½ teaspoon onion powder
- ½ tablespoon nutritional yeast
- sea salt scant 1/4 teaspoon
- black pepper freshly cracked
- 2 tablespoons chives or scallions, finely minced
- 2 teaspoons dill 1 tablespoon if you love dill, chopped, fresh
Instructions
- Combine the milk and vinegar in a medium bowl, and set aside for a few minutes so it can curdle a bit (like buttermilk).
- To the bowl, add the mayo, lemon juice, garlic, mustard, onion powder, nutritional yeast, salt, several cracks of pepper, scallions, and dill. Whisk the dressing until well combined and relatively smooth.
- Taste for seasonings, adding more salt or pepper as desired, or more lemon juice or apple cider vinegar for acidity. I sometimes add an extra teaspoon of lemon juice and a pinch of salt.
- If the dressing is too sharp for your taste, add a tablespoon of unsweetened vegan yogurt and stir to combine.
- Chill the dressing (my preference), or serve now. Store leftovers in an airtight jar for a week, or longer.
Notes
- If apple cider vinegar is unavailable, distilled white vinegar can be used as a substitute.
- Follow Your Heart Original Vegenaise is the preferred vegan mayonnaise for this recipe.
