  • 6 ounces spinach
  • 2 Tablespoons of oil
  • ¾ yellow onion diced
  • 3 large garlic minced, cloves
  • ¾ cup cashews raw, soaked for 2 hours
  • 4 ounces tofu soft
  • ½ teaspoon salt

Instructions

  1. Wilt the spinach in a pot on the stove with a teaspoon of water then set aside.
  2. In a large pan over medium heat, heat the oil and add diced onions. Saute until translucent. Add minced garlic and cook another 30 seconds.
  3. Add the spinach, onion mixture, and remaining ingredients into a blender and blend until smooth.

  • Soak raw cashews for at least two hours to achieve a creamy dip texture.
  • Refrigerate the dip before serving to improve flavor melding and texture.
