Description
This cookie dough combines vegan butter and cane sugar creamed together before adding applesauce, vanilla, almond extract, oat flour, cornstarch, baking soda, baking powder, and salt. The dough chills briefly for easier shaping, then dough balls are rolled in remaining sugar and pressed slightly before baking at 350°F until edges turn lightly golden and the tops feel set.

Ingredients
- 5 tablespoons vegan butter at room temperature
- 1/3 cup + 2 tablespoons cane sugar divided, raw organic
- 2 tablespoons applesauce unsweetened
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup oat flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
Instructions
- Preheat your oven to 350°F and line a cookie sheet with parchment paper.
- In a large bowl using an electric hand mixer, cream together the butter and 1/3 cup of sugar until well combined. Add in the applesauce, vanilla extract, and almond extract and beat until well mixed.
- Add all the remaining ingredients into the bowl and stir until a soft dough forms. Cover the bowl and refrigerate for 10-15 minutes so the dough is easier to work with.
- Spread the remaining 2 tablespoons of sugar on a plate and roll the cookies into lightly heaping 1-tablespoon balls. Roll your formed balls through the sugar and then place them on then prepared pan, pressing them down just slightly.
- Bake until the edges are a touch golden brown and the tops feel set (they firm up a lot once cooled!) about 10-11 minutes. Let cool on the pan complete
