Vegan Sunbutter Granola Bars

Vegan Sunbutter Granola Bars blend toasted oats with sunflower seed butter and maple syrup to create a chewy, naturally sweet base. A drizzle of melted vegan chocolate adds richness and contrast. Vanilla extract and a pinch of salt balance the flavors. These bars are shaped in a pan and frozen to set, making a handy, homemade snack free of animal products and suitable for various diets. Variations can include different nut butters or added seeds and dried fruits to customize texture and flavor.

Description

The Vegan Sunbutter Granola Bars start by toasting oats to deepen their flavor and add a slight crunch. Sunflower seed butter, warmed with maple syrup, acts as the binding and sweetening agent, bringing a nutty creaminess that holds the bars together once chilled. Vanilla extract adds aroma and depth, while a pinch of salt enhances the overall taste. After mixing the oats into the wet ingredients, the thick mixture is pressed into a pan to firm up in the freezer.

Once set, melted vegan chocolate is drizzled on top, solidifying into a contrasting glossy layer. The combination creates a bar that is chewy with subtle sweetness and nutty undertones. These bars are suitable as portable snacks or quick energy bites, and the recipe's flexibility allows substitutions like different nut butters or the addition of seeds and dried fruits.

The bars store well in the refrigerator for up to a week or can be frozen for longer storage. Adjust sweeteners and add-ins based on your taste or diet. Melting chocolate with non-dairy milk or coconut oil ensures smoothness for drizzling.
