Vegetable Dip (no seasoning packets!)
Description
Vegetable Dip (no seasoning packets!) blends common creamy ingredients like mayonnaise and sour cream with fresh spinach that’s finely chopped to add mild green notes and subtle texture. The dried herbs and spices contribute an herby, savory seasoning without overpowering the dip. Buttermilk is added in small increments to achieve a desirable, spoonable consistency that holds well alongside raw vegetables. This preparation is straightforward, requiring only mixing and chilling, allowing the flavors to meld. It’s designed to be served cold, providing a cool, creamy contrast to crisp vegetable snacks.
The dip is versatile enough to be adapted by substituting plain Greek yogurt for sour cream or by adding fresh herbs like dill or tarragon, or introducing heat through jalapeños or hot sauce. It keeps chilled for up to four days, making it practical for preparing ahead.
Ingredients
- 1 cup mayonnaise (226g)
- 1 cup sour cream or plain Greek yogurt (227g)
- 1/2 cup spinach 15g), packed, then very finely chopped, fresh leaves
- 2 tbsp dried onion flakes
- 2 tsp garlic powder
- 1 tsp dried parsley flakes
- 1/2 tsp thyme dried
- 1/2 tsp basil dried
- 1/2 tsp salt
- 1/4 tsp black pepper freshly ground
- 1/3 cup buttermilk (76g), or up to 1/2 cup to thin as needed.
Instructions
- Combine all ingredients together until smooth.
- Refrigerate until ready to serve--up to 4 days. Serve cold with raw veggies.
Notes
- Yield is about 1 1/2 cups, with a typical serving size of 2 tablespoons.
- You can replace the onion flakes, garlic powder, parsley, thyme, and basil with a packet of Knorr vegetable dip mix if available.
- Fresh herbs such as tarragon or dill can be stirred in for additional flavor variations.
- For a cheesy take, substitute cream cheese for sour cream and fold in grated parmesan.
- Add finely diced jalapeño, crushed red pepper flakes, or hot sauce if you prefer a spicy dip.
