Vegetable Ribbon Salad Recipe

For the Dressing

  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons apple cider vinegar
  • 1/2 tsp dried sweet basil Frontier brand
  • 1/4 teaspoon garlic powder Frontier brand
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon black pepper freshly ground, Frontier brand

For the Salad

  • 1 yellow summer squash
  • 1 zucchini
  • 2 carrot small
  • 1/4 cup almond roughly chopped, roasted
  • 3 cups arugula leaves
  • 1/4 cup feta cheese crumbled

Instructions

  1. Whisk the dressing ingredients together in a small bowl and set aside.
  2. Cut the ends off the squash, zucchini, and carrots. Use a vegetable peeler to peel the vegetables into thin ribbons.
  3. Place the veggie ribbons and arugula into a large bowl. Toss with the prepared dressing. Top with almonds and feta. Serve at room temperature.

Notes

  • This salad should be served directly after preparation, as the high water content in the raw squash can pool in the bottom of the serving bowl.
  • To store the Vegetable Ribbon Salad, place it in an airtight container in the refrigerator, where it will stay fresh for up to 2 days.
