  • ½ small onion chopped
  • 2 cloves garlic minced
  • 14 ounces diced tomatoes 1 can, with juices, canned
  • 1 cup green cabbage chopped
  • 1 small carrot chopped
  • ½ red bell pepper chopped
  • ¾ cup zucchini sliced
  • 5 cups beef broth reduced sodium
  • 2 bay leaf
  • ½ teaspoon thyme dried leaves
  • ½ teaspoon basil dried
  • black pepper to taste
  • 2 cups brown rice cooked

Instructions

  1. In a large pot cook onion, garlic, carrots, beans and cabbage over medium heat until slightly softened.
  2. Stir in bell peppers, undrained tomatoes, broth, bay leaves and seasonings. Simmer 6-7 minutes.
  3. Add in zucchini or broccoli and rice and simmer an additional 5 minutes.
  4. Remove bay leaves before serving.
